THE DIETETIC AND METABOLIC WINTER DINNER
- For two servings
A liter of water
two chicken legs not from intensive farming / free-range
a large or two small coppery onion in wedges
a piece of fresh ginger
a clove of garlic cut in two
3-4 bay leaves and a sprig of rosemary
a teaspoon of gojy berries
the juice of half a lemon
a teaspoon of turmeric
salt, pepper a pinch
a small carrot and a half stalk of celery
3-4 shiitake mushrooms
70 grams of rice noodles (they seem few but they are not) or soy.
Cut and clean the vegetables into pieces. Put the liter of water in a saucepan with all the ingredients apart from the rice noodles and the lemon juice. Cook over low heat from the moment of boiling for about an hour, adding the lemon juice at the end. Remove the chicken and bone it apart on a plate.
Always aside, wash the soy or rice noodles under running water with a colander, drain them well (cut them with a pair of scissors if the skeins are too long) and put them raw in the broth, then continue cooking for 3-4 minutes. .
