Plum cake light, the easy recipe

This light plum cake recipe is a real classic: it is in fact a plum cake, very simple to make but delicious, ideal for breakfast, and with a little trick to make it even lighter! Liv for Cake  recipe .

PLUM CAKE LIGHT: THE EASY RECIPE

For 9 servings
2 large eggs
100 grams of brown sugar
2 large plums (fresh) or 3 small-medium
100 grams of flour (I use that of Spelta)
a measuring spoon of cream of tartar or a sachet of baking powder with
vanilla or vanillin aroma
60 grams of coconut or olive oil (or alternatively a jar of 100 grams of apple puree: you save 500 calories)
5 grams of coconut or olive oil (or butter) for the pan cinnamon, a sprinkle or grated zest of lemon Procedure for the light plum cake.

Whip the eggs with the sugar, and when they are pretty frothy, add the oil or apple puree a little at a time, continuing to whisk with the electric whisk. Add the flour previously added with vanilla and yeast flavoring. Incorporate the flour into the egg and sugar mixture. Grease a rectangular or square pan, put the plums cut into pieces on the bottom, then pour the egg and flour mixture.

Place the pan in a preheated oven at 175 degrees and bake for about 20-30 minutes. When the surface is golden, turn off the oven, let your cake cool completely, take it out of the oven and sprinkle it with brown sugar or icing.
