Lava cake light: the recipe

Lava cake, also known as a cake with a soft or warm heart of chocolate, is a dessert that in recent years is also present in many restaurants, and that in supermarkets you can find in a pre-prepared version, in a sachet or in a dessert ready to reheat.

The calories of the lava cake, however, definitely make the desire to eat it pass: a portion in fact ranges from 580 to 660 calories .

Reason? A very high fat content, especially butter.

You didn’t know, huh? So small and so caloric!
In this article we see how to make a light lava cake, good and creamy but without too many feelings of guilt!

LAVA CAKE LIGHT: THE RECIPE

For 6 tartlets

  • 50 grams of unsweetened cocoa + a spoonful of cocoa for the cups (I chose the Perugina Dark) 
  • spray oil or butter spray for molds (I use this, because it only has two ingredients, one is coconut oil:  Pam Coconut Cooking Spray ) 
  • 85 grams of extra dark chocolate with more than 70% cocoa 
  • 25 grams of butter 
  • two tablespoons of seed, mild olive or coconut oil (I use coconut oil)
  • 85 grams of flour 00 
  • 100 grams of Moscobado cane sugar 
  • a teaspoon of baking powder 
  • a pinch of salt
  • half a bag of vanillin or two drops of vanilla flavor
  • 3 large eggs, free-range or organic 
  • 6 muffin molds in aluminum or silicone (I don’t recommend the paper ones!)

    Method. 

    Heat the oven to 180 ° / 200 °.
    Sprinkle the cups with spray oil and sprinkle them with bitter cocoa.
    Melt the chopped chocolate with the butter. Separately, whip the eggs with the sugar, vanilla, salt, and add the oil at the end.
    In another bowl, mix the flour with the unsweetened cocoa and baking powder. Gradually add the melted chocolate into the egg mixture, using a blender or stirring quickly to keep them from thickening.
    Pour the flour by spoonfuls, mix gently and divide the mixture into 6 muffin molds. Immediately put in a hot form, and cook for 13 minutes, until the outside is well cooked.
    Take them out of the oven, with gloves after a minute remove the cakes from the molds.
    Serve them immediately, beautifully warm.
