These chocolate, coconut and almond muffins are delicious, and if you follow these tips, they are also low in calories. They are absolutely nutritious and healthy, and are a good compromise for those who do not want to exclude sweets from their diet but want to follow a healthy diet.
Ingrediants
  • For 5 people:
  • 100 grams of dark chocolate with 75% cocoa
  • 200 gr of wholemeal flour
  • 30 gr of grated coconut
  • 2 tablespoons of unsweetened cocoa
  • 50 gr of defatted almonds (you can find it online on Tibiona)
  • two jars of 100% apple puree (brand Melinda or similar)
  • a teaspoon of olive oil
  • 8 generous spoons of Truvia
  • 130 ml of water
  • 100 gr of egg white
  • 1 sachet of vanilla yeast
Instructions
  1. Melt the chocolate in a bain-marie, coarsely chop the almonds in a blender.
  2. In a bowl, mix the two flours with yeast, cocoa and truvia. Add the apple puree, water, oil and egg white. Finally, pour the melted chocolate and almond flour. Fill ⅔ 10 muffin tins and bake them in the oven at 180 ° for 15 minutes.
