HYPOCALORIC PEACH CAKE
Filled with yogurt and peaches.
For the cake (24 cm mold).
- 400 gr of yellow peaches, including skin (the equivalent of about 6 peaches)
- 120 grams of flour (or 100 grams of wholemeal flour)
- 100 gr of potato starch
- 3 medium eggs
- 100 ml of semi-skimmed milk
- three tablespoons of Truvia
- 2 and a half tablespoons of brown sugar
- the grated rind of one lemon
- 1 sachet of vanilla yeast
-
For the external filling.Â
- 170 gr of fage Total 0% fat yogurt or 175 gr of exquisa fitline cheese.
- a spoonful of honey
- 20 ml of semi-skimmed milk
- a large yellow peach of 250 gr
- cinnamon and nutmeg: a pinch
Method.
In a blender, blend the pitted peaches including the peel with the milk, lemon zest and stevia. In a separate bowl, mix the flours with the sugar. Pour 3-4 spoonfuls of the peach mixture into it, alternating them with an egg, mixing gradually with the electric whisk until all the ingredients (eggs and peach smoothie) are used up. Preheat the oven to 180 degrees. Add the yeast to the mixture, pour very gently into the 24 cm mold and put in the oven for about 25 minutes (do the toothpick test).
While the cake is cooking, mix the yogurt with two full spoons of milk and honey and put the cream in the fridge, then cut the peach for the garnish into very thin and regular slices. Take the cake out of the oven, let it cool. Pour the yogurt cream over the cake, finish by placing the radial peach slices in the center and sprinkling with a mix of nutmeg and cinnamon.
Enjoy it as soon as it is cold (the consistency of the cake remains soft and moist).
It can be kept in the fridge for 3-4 days, covered with plastic wrap.
