Here’s how to make it, it’s very simple to do and has a low glycemic index despite the bananas.

LIGHT CAKE WITH COCOA AND BANANAS
For 8 portions
3 medium bananas (340 gr) 
a jar of apple compote type Melinda Mousse 100% apple (100 gr) 
an egg + an egg white 
120 grams of wholemeal flour 
50 grams of bitter cocoa
a pinch of salt
100 grams of drops of  dark chocolate chips PaneAngeli
a generous pinch of ginger powder or clove powder
a sachet of vanilla baking powder

In a blender, blend the bananas well with the truvia, the egg and the egg white, the apple compote. In a bowl, mix the dry ingredients, i.e. flour, yeast, salt, cocoa, spices. Combine the banana mixture, mix gently, incorporate half of the chocolate chips at the end. Transfer to a rectangular pan covered with parchment paper and put the mixture, adding the remaining drops on top. Put your light cocoa cake in the oven at 175 ° for about 30 minutes.
Let it cool completely and cut the mixture into 8 squares.
