These red lentil meatballs are healthy and rich in beta-carotene and fiber: ideal for those who want a delicious dinner or lunch but with natural, light and nutritious ingredients. They are also dietary, vegan and complete from a protein point of view, with only 120 calories per serving. They should be paired with a salad.
Ingrediants
- For 4 people:
- 400 grams of carrots (or pumpkin)
- 200 grams of already boiled red lentils (or alternatively shelled lupins not in salt or chickpeas)
- 80 gr of oat flakes
- turmeric
- a pinch of pepper
- a handful of parsley
- a pinch of salt
- juice of half a lemon
- a level spoonful of oil
Instructions
- Boil the carrots and put them in a blender well drained with half oats, lemon, boiled lentils, parsley, oil and spices. Pour the mixture into a bowl and add the other half of the oat flakes, adding salt if necessary. Keep the mixture in the fridge for half an hour covered with cling film to firm up. Remove from the fridge, make meatballs 5-6 cm in diameter, place them on a baking sheet lined with parchment paper and bake them in the oven for 20 minutes at 200 degrees.
