Just Egg vegan eggs, the vegan egg solution
Is there a vegan alternative to eggs? In general, those who are vegan use egg substitutions that allow you to bind the doughs that require them, such as flaxseed jelly, mashed bananas or aquafaba .
But from today those who are vegan and want to enjoy omelettes, scrambled eggs or use eggs for their recipes have Just Egg available , a liquid preparation that once cooked looks just like eggs.
Just Egg is in fact a product that is obtained from the processing of mung beans, and which was launched in 2017 by a company in San Francisco.
Three tablespoons of the product provide 70 calories and 5 grams of protein – the equivalent of a medium to large egg.
THE INGREDIENTS OF JUST EGG
The ingredient list isn’t excellent in my opinion, so I wouldn’t use Just Eggs every day.
In fact, the ingredients are water, mung bean protein isolate, cold pressed canola oil, dehydrated onion, gellan gum, flavors and dyes of natural origin such as turmeric and carrot extract, potassium citrate, salt, sugar, tapioca syrup, tetrasodium pyrophosphate, transglutaminase, nisin.
Does this mean that we can use Just Egg for savory and not sweet preparations?
Not exactly, despite the ingredients the product is not salty and according to the official website you can make pancakes, waffles, sweet crepes or cakes.
The cost is around 7-8 euros per bottle.
