5 recipes of dietary winter soups

Each of us, every day, fights with the cold and with… .. the belly.

Let’s face it, in winter it is easier to pick up a few kilos also because it is easier to do less sporting activities due to the not always mild weather and boredom.

Therefore, I would like to write about soups , which are a much used comfort on cold,  winter days that are  simple to cook with 5 light recipes.

1. Pumpkin ginger and apple soup

Ingredients for 4 people:

1 teaspoon of oil
500 g of pumpkin
1 medium onion
1 pink or royal apple
1 small carrot
2 teaspoons of finely chopped fresh ginger
800 ml of vegetable broth better if made fresh with carrot onion potatoes and celery
half a teaspoon of nutmeg
parsley if you have goes
salt (better iodized)

2. Lentil soup with spinach and quinoa

Ingredients for 4 people:

half an onion or 1 shallot only if small
1 clove of garlic
1 teaspoon of oil
1 teaspoon of turmeric powder to give flavor
1 teaspoon of cumin powder to give flavor
2 pods of cardamom, optional
half a teaspoon of cinnamon
half a teaspoon of chilli better if powder
1 teaspoon of tomato, peeled or tomato paste
110 g dried red lentils
60 g raw quinoa
300 g fresh spinach
salt to taste without abounding

3. Arab chickpea soup

Ingredients for 4 people:

2 small red onions
1 clove of garlic
2 aubergines
4 tablespoons of oil
1 liter and a half of water (you can also use the cooking water of the chickpeas)
500 g tomato puree
1 vegetable stock
400 g cooked chickpeas
2 teaspoons of chilli in powder (if you like)
1 small stick of cinnamon
1 bunch of coriander but you can’t find it, parsley is fine too

4. Escarole and bean soup

Ingredients for 4 people:

400 g dried cannellini beans (or 800 g if cooked)
1 and a half cans of chopped tomatoes
2 bundles of smooth escarole (chard can also be used)
1 clove of garlic
4 teaspoons of oil
a few basil leaves to taste
salt to taste without abounding
4 slices (100 g) of dark cereal bread OR 60 g pasta (this if you want to eat a complete meal and if it is not too strict a diet but just a way to stay light)

5. Rice and chicken soup

Ingredients for 4 people:

400 g lean chicken breast
160 g rice
2 onions
2 large carrots or 3 small carrots
a celeriac or 3 courgettes (to taste)
a few sprigs of celery or a little parsley
2 bay leaves
4 cloves (optional but preferable)
salt to taste but certainly without exaggerating

Conclusions

In winter it may be that you eat more but here it is about learning to eat better and with awareness. 5 easy-to-make winter soup recipes for lighter cooking, this is what we must learn to do to try to love ourselves more.

Buy fresh zero-kilometer products, possibly organic and do not abound with condiments!
