Who was Weston A. Price ? A dentist, born in the late 1800s. Having become a legend, so much so that he had a foundation in his name, Weston Price was the first to realize that the health of his patients’ teeth stemmed from bad eating habits and that often teeth were the mirror of health. And then he began to do a series of research to try to understand how the modern diet differed from that of tribal peoples . So he traveled a lot and noted all the eating habits of the populations who still lived like their ancestors, writing on them some notes, which in the 1940s became a book (which I read, point by point, I believe six years ago), namely:  Nutrition and Physical Degeneration.
This was long before Ancel Keys , the author of the 7 Countries study, talked about the Mediterranean diet . Let’s say that Price first came up with the idea of ​​traveling to understand what diet is linked to health, more or less in the years when Keys was involved in the Minnesota Starvation Experiment.
Weston Price with his study has influenced many of the dietary theories we know now: in particular the Paleo diet partly refers to its principles, so much so that the Price Foundation itself has made clear the differences between the Weston Price diet and the Paleo by Cordain and Wolf. 

The Weston Price diet, defined as WAPF, is in short a cornerstone of healthy eating.
Price sensed that populations with the healthiest diet (and almost no dental problems) consumed more healthy fats, no industrial products, more vitamins, both hydro and fat-soluble , thanks to local fruit, vegetables, meat and fish, also eaten in their most common parts. poor and fat. Grains and legumes, when present in the diet, were soaked for a long time, often left to sprout to reduce the harmful potential of antinutrients. Every dish, in every culture, was associated with animal proteins and vegetables with abundant fat, and a portion of fermented foods (such as natto in Japan, sauerkraut and gherkins in Eastern Europe, etc.). Eggs and dairy but artisanal dairy products were consumed daily.
Currently, many people follow this diet or are inspired by this diet, and among the followers of the method we mention the doctors Chris Masterjohn, Stephan Guyenet, and the two spouses Jaminet, authors of the Perfect Health diet.
