Salad with spelled and tuna

Ingredients for 4 people

  • 200g of organic spelled
  • 4 small courgettes
  • 1/2 glass of white wine
  • 120gr of natural tuna (drained)
  • Italian garlic
  • fresh parsley
  • fine iodized marinated salt
  • ground black pepper
  • extra virgin olive oil

Salad with spelled, tuna and beans: preparation

Boil the spelled in abundant salted water for about 40 minutes. In the meantime, cut the courgettes into slices and sauté them in a pan with a drizzle of oil, garlic and a little chopped parsley. Cook them for about 10 minutes, then add the well-drained farro and the crumbled tuna. Sauté in a pan for a few minutes, adding, if necessary, a little spelled cooking water. Season to taste with oregano, and the remaining parsley.
