Low glycemic index cake with almonds and apples
A low glycemic index cake with almonds and apples, but low in fat (despite the almonds), without flour, without gluten, without lactose. Very easy to make, with an exceptional product that is degreased almond flour (280 calories per 100 grams, compared to about 600 for traditional almond flour), which makes it rich in fiber and suitable for everyone, especially for breakfast.

LOW GLYCEMIC INDEX CAKE WITH ALMONDS AND APPLES
Three whole organic eggs + one yolk
A kilo of apples
A teaspoon of coconut oil (or olive, not strong)
120 grams of honey, or malt (barley, rice) or fructose
cinnamon powder
150 grams of almond flour degreased
Procedure for the low glycemic index cake: cook the peeled apples, cut into wedges, in a non-stick pan, with coconut oil and cinnamon (optional: grated lemon zest). Add half honey honey after 5 minutes, and caramelize. Turn off and allow to cool completely. In a bowl, mix the degreased almond flour with the eggs, egg yolk and honey. Pour the caramelized apples into the bottom of a non-stick pan, pour the mixture of degreased almond flour and eggs over the apples, until they are completely covered. Put the cake in the oven at 180 ° and cook for about a quarter of an hour / twenty minutes, doing the toothpick test. Take out the cake and let it cool completely. Turn it over onto a serving dish so that you have the apples on top.
