LOW CARB BREAD OR KETOGEN BREAD
For 8 servings (one serving equals two slices)
7 large eggs or 8 medium organic eggs
half a teaspoon of Xanthan gum or alternatively a teaspoon of flaxseed powder, psyllium seed powder or agar agar powder
a pinch of salt
115 grams of butter
a sachet of non-vanilla baking powder or a sachet of instant yeast
spices and flavorings of your choice
65 grams of degreased coconut flour (not grated or flakes) organic, ideal brands for me Il fior di Loto: it is a flour with almost half of the fattest coconut flour, more fiber and less carbohydrates, also suitable for savory recipes.
Procedure for low carb bread or ketogenic bread: melt the butter, and with an electric mixer in a bowl, work the eggs first for a minute, then add all the ingredients starting from the coconut flour to finish with the yeast. Put in a loaf pan or in 8 loaf pan molds if you already want to portion it.
In the large mold, it should be put in the oven at 180 degrees for 45 minutes, about 20 minutes for the molds.
Low carb bread or ketogenic bread is ready when it is golden on the surface.
