How to make light lasagna ? In this article we see some ideas for making light lasagna at home with alternatives to the traditional egg pasta sheet. In this way, and always taking into account that the bulk of the calories in lasagna is not given by the pastry but by the filling, we can eat lasagna even if we are on a diet, obtaining delicious and low-calorie meals.
I’ll give you some advice in this case too! But let’s start to see how to make light lasagna from the pastry, taking advantage of alternatives.
1. HOW TO MAKE LASAGNE LIGHT: IDEAS FOR THE DOUGH
- Light lasagne with phyllo dough: phyllo dough is a pastry used in Greece for sweet and savory dishes, such as desserts or rustic pies. It is very thin, and for 100 grams it provides 299 calories against the 365 of egg puff pastry, but not the same amount is used. Using the thin sheets of phyllo dough, which are lighter in weight, we can obtain a lasagna for 2-3 people starting from 50-60 grams.
- Light lasagna with pumpkin: another tasty alternative can be given by thinly sliced pumpkin (or beetroot) slices and used instead of the egg pasta sheet. In this case we will get a very low-calorie fake pastry.
- Light lasagna with potatoes: in this case we will need a mandolin or potato peeler to obtain chips, that is, very thin slices of potato. They are kept in cold water for a few minutes, and are used instead of the pastry. A typical Greek dish, boureki, is nothing more than a potato lasagna with zucchini and cheese.
- Shirataki lasagna: konjac shirataki are now also available in lasagna format, as on Amazon the Eat Water Slim Pasta Lasagne or on the CleanFoods website . They should simply be placed on the pan after having soaked them in cold water, squeezed and spent a few seconds on a work surface with a rolling pin, to make them thinner. In this case, as with vegetable lasagna, the filling and the sauce must be thick!
- Single portion lasagna with wasa slices: very simple, ideal for a single portion of lasagna. Simply place three wasa slices (blue pack) in a single-serving dish. One on the bottom after half a ladle of sauce, one for the second layer and a final one for the third (plus any other ingredients: grilled vegetables, parmesan, light béchamel). Above, abundant sauce. They are cooked in 15-20 minutes in an oven at 180 °. Ninety calories for the wasa puff part, plus the calories in the filling. Obviously, they can also be made for several portions.
2. HOW TO MAKE LASAGNE LIGHT: FILLING IDEAS
- Béchamel light: it is obtained with skimmed milk (or light unsweetened vegetable), frumina or corn starch and a teaspoon of butter per person. Mix the frumina or starch (a level spoon) with 300 ml of skimmed milk, bring the mixture to a boil, let it thicken and finally add two teaspoons of butter, nutmeg, salt and pepper.
- Light meat sauce: it is obtained using minced chicken meat (chosen), cooked in a non-stick pan with onion, celery and carrot and a tablespoon of broth or red wine. Then add the tomato puree, and at the end of cooking the chopped basil and a teaspoon of oil for 4 people.
- Vegetable puree: it is obtained as a vegetable cream, only denser, for example by cooking courgettes, tomatoes or peppers, broccoli or other in a non-stick pan. Blend the cooked vegetables with a few teaspoons of unsweetened skimmed or vegetable milk until a thick cream is obtained. We can customize it with a teaspoon of pesto and use it instead of meat sauce.
- Ricotta or light cottage cheese: they can be used instead of mozzarella. In this case, the ricotta must be well drained first, or the cottage cheese must be passed in a mixer until a thick cream is obtained.
Those who are vegan can use silk tofu with the same process as cottage cheese.
