As I did for Christmas too, here are some ideas for a light Easter menu , which allows you to have a complete lunch from appetizer to dessert for a total of 650 calories.

The peculiarity of this menu? Despite the few calories, it is a light Easter menu full of seasonal vegetables, typical of the Easter period but also very purifying, and with white and lean meats.
Ideal for those who have to stay on a diet even during the holidays. Furthermore, the preparations are very simple.

EASTER LIGHT MENU: ONLY 650 CALORIES

Appetizers.

  • Savory muffins with zucchini and mint.
    Recipe for 4 people, for a muffin per person per serving.
    100 grams of egg whites, 40 grams of light Santa Lucia ricotta, 100 grams of grated zucchini, a handful of mint, a pinch of salt, a teaspoon of parmesan, a level teaspoon of oil for the molds, a pinch of pepper, grated zest of a quarter of organic lemon.
    Dilute the ricotta with the parmesan, the mint, salt and spices, lemon zest. Add the grated courgettes and at the end the whipped egg whites. Transfer the mixture into 4 muffin tins for 2/3 and cook for 25 minutes at 175 °.
    Kcal: 45.
  • Bresaola carpaccio with artichoke and fennel salad.
    Recipe for 4 people.
    350 grams of fennel, 150 grams of artichoke hearts (about 6 whole), a lemon, a teaspoon of oil, salt, pepper, 80 grams of Bresaola della Valtellina, juice of half a lemon or a tablespoon of apple cider vinegar.
    Clean the artichokes, leaving the hearts, and soak them in water and lemon. Clean the fennels and soak them with the artichokes for 10 minutes. With a cutting board and a good knife, cut the artichoke hearts into very thin strips and place them in a bowl. Cut the fennel into strips and put them in the same bowl. In a small cup prepare an emulsion with salt, pepper, lemon juice or apple vinegar, a teaspoon of oil. Pour the emulsion into the salad. Divide the bresaola into 2-3 slices per dish. Pour the salad in spoonfuls and serve with a sprinkling of chopped parsley.
    Kcal per serving. 80.

First course. Cream of snow peas.

For 4 people. Follow the recipe on this link , using a teaspoon of oil in all and a base of vegetable broth.
As an alternative to snow peas, fresh broad beans can be used in doses of 400 grams.

Second dish. Stewed rabbit with asparagus and lemon.

Dessert. Light and fit pasta dish.
