Gazpacho, the light recipe
Gazpacho is a cold, summery Spanish soup, which is often offered as an appetizer, very pleasant to the taste and light on the palate, but not as light as it would seem. The traditional Andalusian recipe in fact provides bread soaked in vinegar and a lot of olive oil to make the dish fluffy.

GAZPACHO: LIGHT RECIPE
Ingredients for 4 people.Â
600 gr. of red tomatoes without skin
200 gr. between half a green pepper and half a red pepper
10 gr. extra virgin olive oil
1 small red onion
1 small red chilli
a not too sour cucumber
a clove of garlic
a slice of stale bread (25 g)
wine vinegar, two tablespoons
cumin of your choice, pepper to taste, salt to taste. b
up to half a liter of cold water

Pass the stale bread under water, squeeze it and season with a spoonful of vinegar. Cut all the vegetables into pieces and put them in the blender with another tablespoon of vinegar, very cold water, red pepper and various spices. Blend well. Add the bread and the tablespoon of oil and blend well. Pour the cream into a bowl, let it rest for a few hours in the fridge before serving.
Instead of bread cubes, you can serve gazpacho with boiled shrimp, diced tofu , chopped raw pepper and a wedge of avocado, for a complete meal without damage to the line.
