Flourless biscuits, natural, with 5 ingredients

Today I am posting a really good recipe for you to make homemade biscuits without cereal flour, with no added sugars, and with only 5 ingredients.
In addition, these are really simple cookies to make, perfect for breakfast and with a low glycemic index.
The recipe for these low GI, flourless cookies is from the blog Deliciously Ella.

BISCUITS WITHOUT FLOUR AND WITH ONLY 5 INGREDIENTS

  • Ingredients for 12 servings.
One serving = one large cookie.
  • 180 grams of almond flour.
  • 12 Medjool dates (or 12 normal dates soaked for 3-4 hours and then squeezed)
  • a tablespoon of chia seeds
  • 3 tablespoons of vegetable milk of your choice or skim milk
  • 40 grams of dark chocolate chips or dark chocolate in pieces or raisins.
  • Grated zest of half a lemon.Blend all the ingredients in a food processor, apart from the last one, until the mixture is uniform.
Add the chocolate chips, mix well and make 12 uniform balls. Place them on a baking sheet with parchment paper at a safe distance. Squeeze each ball with your hand to get a flat, round shape.
Bake the biscuits for 15-20 minutes, until golden brown, in a preheated oven at 170 °. Calories per cookie: 130.
