Chufa flour: gluten-free and sweet flour!

I recently discovered chufa flour , a flour obtained from dried sweet buntings. It is a natural gluten-free flour (the bunting is in fact a small tuber, from the Cyperus Esculentus plant ), not from cereals or seeds and with a particularity: it is naturally sweet . It can also be eaten raw, but personally I prefer it in the preparation of desserts such as cakes and donuts or pancakes . Its sweet taste allows you to make a sugar-free cake, completely sugar-free, with a faint nutty aroma. It is a food already known in those who follow the paleo diet: chufa flour contains about 450 calories, 100 more than wheat flour or other cereal flours, but don’t be frightened by this fact. Because to make sweets it takes very little: its richness in fiber (it has half the carbohydrates of a wheat flour, but very few simple sugars) will allow you to make fabulous desserts with only 100 grams of chufa flour, against 200 of a traditional flour. The result will be dietary, low-calorie sweets, also suitable for those who are diabetic, and naturally sugar-free.
From the sweet bunting that is the basis of this flour, it is also used to make a drink, such as chufa milk (without sugar) or horchata (traditional drink similar to barley fish, therefore with the addition of sugar): chufa milk is a perfect substitute for vegetable milk-based drinks, and is perfect with coffee. Furthermore, even in this case, sugar should not be added. My mother, who cannot consume milk or dairy products, loves it, while she has always disdained almond, rice, oat or coconut milk with coffee. But let’s go back to the chufa flour. On page two I leave you the recipe for a diet cake based on this naturally sweet and gluten-free flour.

Ideal for those suffering from constipation, chufa flour is rich in minerals (including magnesium and potassium) and contains vitamins E and C. Really a great ally for breakfast. It also does not create intestinal fermentation phenomena.
