For example, the Christmas Pudding , a “bread and dried fruit pudding” that is baked in the oven or in a double boiler, and served with cream, fruit sauce and brandy.
In short, a recipe that in the traditional version is really caloric, but that we can offer in a light version.

Here is the quick and easy recipe , but above all light, to make Christmas Pudding at home. Very low sugar content. The serving size is very large per serving! If you want you can reduce it.

CHRISTMAS PUDDING RECIPE LIGHT

Dose for 4 people .
Ingrediants.

  • 100 grams of almond flour (or hazelnuts or pistachios).
  • 100 grams of grated carrots.
  • 50 grams of fresh or frozen blueberries.
  • Same quantity of fresh or frozen raspberries or currants
    (alternatively 100 grams of frozen mixed red fruits).
  • 10 grams of chopped walnuts.
  • 100 grams of Melinda apple puree + butter for the mold
  • A spoonful of liquid cream.
  • Half a bag of vanilla powdered levito.
  • A spoonful of unsweetened cocoa.
  • 5 tablespoons of Truvia or erythritol.
  • A large pinch of cinnamon, one of ginger and one of cloves.
  • The grated zest of half an orange.
  • A pinch of salt.
  • 3-4 dried prunes into small pieces.

You need a pudding mold that can go in the oven, or alternatively a plum-cake mold.

CHRISTMAS PUDDING LIGHT RECIPE: PROCEDURE

  • Mix the red fruits with the grated carrot.
  • In a bowl, combine the almond flour with the baking powder, Truvia, salt, spices, lemon zest, cocoa, walnuts, chopped plums.
  • Add the apple compote, egg and cream, finally the mixture of carrots and red fruits. Mix very well.
  • Pour the mixture into a greased mold or covered with parchment paper and bake in the oven putting small bowls of water on the sides to create the right humidity.
  • Cook at 175 ° for twenty minutes, do the toothpick test and if it is not dry but soft, continue for another ten minutes.

Turn out after it has cooled down.

Serve with 170 grams of Fage 2% fat yogurt instead of cream, mixed with Truvia, plenty of cinnamon and a grating of orange zest, plus half a teaspoon of brandy or whiskey (optional).
