  • 4 medium eggs equivalent to 150 grams of total weight
  • aroma: lemon peel, almond flavor, as desired



Shortcrust pastry biscuits: how they are prepared at home


First, mix the butter and sugar until you get a homogeneous mixture. Add the eggs (exactly the indicated weight) and knead the dough until you get a homogeneous paste. Then add the flour and work until it is completely incorporated, for the shortest time possible. Then wrap in plastic wrap and let it rest in the refrigerator for 2 hours, then roll out the dough with a rolling pin. Now cut the cookies into the shapes you prefer with the cookie cutters. You can make double cookies, then prepare a shape that acts as a base and which is then stuffed and a top with a hole that acts as a hat. Finally bake in a pre-heated oven at 180 ° for 10 minutes and let it cool.
