Anna Moroni’s summer soup for our diet

The recipe for a summer soup by chef Anna Moroni from the show “La Prova del Cuoco”, ideal as a single plate instead of a lunch of pasta and rice to lose weight. It will be enough to use a portion as a real substitute meal to lose weight little by little and without other specific restrictions, alternating vegetables and choosing fresh and seasonal proposals.
It can be eaten warm or cold (I prefer to eat it just warm!). Here is the recipe and my tips at the end of the article to customize it in order to optimize weight loss and have a mild diuretic action and deflate the belly!

ANNA MORONI’S SUMMER MINESTRONE
Ideal as a single plate instead of a meal based on more carbohydrates (pasta, rice, cereals)
For 4 portions:
100 g of onion, 3 medium carrots *, a heart of celery, a quarter of savoy cabbage * , 200 gr of fresh green beans *, 150 gr of pumpkin, 100 gr of apple, 100 gr of chard or spinach, 250 gr of potatoes, 4 peeled tomatoes *, a leek, a small clove of garlic, a teaspoon of oil plus a teaspoon of pesto on a plate, preferably homemade.
Calories: about 250 per serving.
Method: 
Let’s start by making the sauté with oil, celery, onion and carrot, plus the poached garlic that will be removed. Add the chopped peeled tomatoes, then the leek, the pumpkin, the green beans, the chard, the chopped potatoes and finally the diced apple to the sauté. We cover the vegetables with boiling water, fresh herbs and spices to taste. We only salt at the end of cooking, and bring to the table adding a teaspoon of raw pesto.
For a more diuretic soup, my ideas:
Instead of medium carrots: 200 grams of mushrooms.
Instead of cabbage and tomatoes: 250 grams of fennel.
Instead of green beans: 200 grams of zucchini.
The rest remains unchangedbut you can avoid the sauté and then the teaspoon of oil for a lighter recipe.
Also try this variant, ideal if you have fiber digestion problems and swelling after meals.
