Peach Sugar Free Muffins: Only 80 calories
These sugar-free peach muffins are perfect for a snack or a quick snack: they satisfy our desire for sweet without weighing on the daily calorie intake. Here is the quick and easy recipe to get 16 sugar-free peach muffins of 80 calories each, with vegan or not indications.
SUGAR-FREE PEACH MUFFIN
For 16 muffins
Ingredients:
2 large peaches (about 400 grams per net fruit) cut into pieces, peeled
one and a half teaspoons of chopped flax seeds or psyllium cuticle or a medium organic egg
2 tablespoons of warm water ( if you use egg no)
2 teaspoons of lemon juice
vanilla flavoring of your choice
250 ml of soy, rice or almond milk without sugar
250 grams of flour
2 teaspoons of baking powder
2 teaspoons of baking soda
60 grams of Truvia
a pinch of salt
grated zest of one lemon
7-8 chopped almonds
a spoonful of honey or agave syrup (optional: add 5 calories to a muffin if you put it)
Heat the oven to 180 degrees. Mix the chopped peaches with the optional teaspoon of honey and lemon zest. Mix the flaxseed powder with the water and milk, or egg and milk, then add the vanilla and lemon juice to a bowl. In another bowl mix flour with baking powder, baking soda, salt, Truvia. Add the liquid one to the dry mixture, mix well, and only when it is well blended, the chopped peaches with the lemon. Pour the mixture into silicone (or other) muffin molds, sprinkle with chopped almonds, a pinch for muffin (optional). Bake for 15 minutes or until cooked (maximum 20 minutes, anyway).
Nutritional values for sugar-free muffins: 79 calories per muffin, 1.2 grams of fat, 16 of carbohydrates, 3 of protein.
