Healthy red fruit muffins: 100% natural!

HEALTHY MUFFINS WITH RED FRUITS: THE RECIPE
Ingredients for about 8 muffins.
- 128 grams of degreased coconut flour, Il fior di Loto or Baule Volante brand.
- 25 grams of banana or chufa flour.
Alternatively 20 grams of rice flour + a teaspoon and a half heaped of Truvia. - 4 eggs.
- 2 tablespoons of coconut oil or mild olive oil.
- A sprinkle of cinnamon.
- A teaspoon of baking soda.
- 200 grams of pureed mango.
Or 200 grams of peach / papaya. Or 130 grams of banana + two cups of water (the fruit must be very ripe). - 200 grams of red fruits.
Or alternatively 50/60 grams of raisins or chocolate chips.
Preparation
The process is very simple.
Leaving the red fruits aside, mix the eggs with the fruit puree and cinnamon, then add the flours added to the baking soda.
Lastly, red fruits or raisins or chocolate.
Bake in molds greased with a little coconut oil for 35 minutes at 180 °.
