Wholemeal Apple and Hemp Pie: 216 calories per serving
This wholemeal apple and hemp pie is a light and oil-free alternative, but very nutritious due to the addition of Greek yogurt and hemp flour.
Low in sugar, it is an ideal solution for children and adults, as well as a low-calorie snack or breakfast with a large dose of fruit.
A large slice contains about 200 calories.
** Hemp flour is rich in amino acids, vitamins and minerals, but has a slightly bitter taste. In the cake, it gives a rustic touch that goes well with apples. If you want to replace it, use buckwheat flour or brown millet flour, two other wholemeal flours rich in nutrients, from psuedo-cereals.
The result is an original and healthy reinterpretation of grandma’s traditional apple pie!
Wholemeal apple and hemp cake
Dose for eight people (25 cm. Diameter mold)
180 gr. wholemeal flour
25 gr. hemp flour
4 medium-sized red apples for about 800 gr.
80 gr. fructose + a sprinkle
Half a teaspoon of stevia (If you want you can use only that instead of fructose: in this case, increase the dose as usual, the dosage depends on the type of stevia. The saving is 40 calories less per serving)
A pinch of salt
170 gr. white low-fat Greek yogurt
4 medium eggs
Grated lemon zest and juice of one lemon
Grated nutmeg or mix of nutmeg and cinnamon
One sachet of baking powder
Skim milk or water if necessary (if the dough is too hard: this also depends on the type of wholemeal flour: start by adding one or two tablespoons)
Method.
Peel three apples in coarse pieces and one in more regular slices and sprinkle them with lemon juice. In a bowl, mix very well the two flours, a pinch of salt, lemon zest, nutmeg and baking powder.
In another bowl, work the yogurt, eggs, fructose and stevia until you get a smooth cream and add the flours little by little.
If the mixture is not very soft, add a little water or skim milk.
Be careful to mix very well and at the last add the chopped apples.
Stir and arrange the mixture in a non-stick pan or lined with parchment paper.
On the surface arrange the sliced ​​apples and sprinkle with a little fructose, then put in the oven at 180 ° for about 45 minutes.

Vegan wholemeal apple and hemp cake
If, on the other hand, you want to make this cake without eggs or Greek yogurt, replace the Greek yogurt with two 125-gram jars of low-fat white soy yogurt, do not add water to the mixture and instead of eggs use 130 grams of ripe banana mashed with a fork + 2 tablespoons of coconut oil or other vegetable oil.
In this case, mash the banana with the oil until you get a viscous cream, add the two pots of soy yogurt and the fructose with the stevia.
Then start incorporating the flours as per the previous procedure and finally the apples. The calories are similar: 220 per serving.
