Ingredients to make the light protein cheesecake

  • 340 grams ricotta or philadelphia light
  • 270 grams fat-free Greek yogurt
  • two eggs
  • 50 gr. skim milk (optional)
  • one and a half scoop of neutral whey protein (alternatively: 40 grams of skimmed milk powder and a level tablespoon of cornstarch or 30 grams of cornstarch or frumina)
  • a pinch of whole salt
  • vanilla extract
  • a spoonful of baking powder
  • a tub of fresh blueberries and one of raspberries or currants (about 250 g)
  • two tablespoons of stevia or 120 grams of erythritol or truvia
  • 2 tablespoons sugar-free hero jam with blueberries or berries
  • a little lemon juice

Preparation.

  1. In a bowl, blend the two cheeses with the erythritol or the stevia until a smooth cream is created, add the eggs one at a time, a pinch of salt and the vanilla, then mix in the protein powder or skimmed milk powder. If the dough is too thick, add the milk. Add the previously floured red fruits and finish with the yeast.
  2. Put the mixture in a pan lined with round parchment paper, with a diameter of 18 cm. Put in the oven at 180 degrees for about half an hour (do the toothpick test). Once cooled completely, pour over a syrup made with two tablespoons of jam and one of lemon juice left to melt for a minute in a saucepan over low heat, until it covers the top layer of the cake. Garnish the protein cheesecake with blueberries or currants to taste and keep in the fridge.
