Spaghetti with light pesto, only 170 calories per serving!
These light pesto spaghetti are light, functional and have a dietary pesto sauce as a base that we can also use with other types of pasta or use for other preparations. The recipe is from the Hungry Girl , which we have already talked about here .
The calories per serving are only 170! Ideal if you are on a diet.
Here’s how to make them.
SPAGHETTI AL PESTO LIGHT: 170 CALORIES PER PORTION
For the pesto sauce, recipe for two portions
45 grams of basil leaves
65 grams of light ricotta Santa Lucia (or other brands, for example Vital)
two teaspoons of grated Parmigiano Reggiano
a teaspoon of pine nuts
1 teaspoon of olive oil
a small piece of garlic
, salt, pepper
To make the sauce, start by putting the basil with the garlic and pine nuts in a food processor. Chop well. Add ricotta, parmesan, oil and season with salt and pepper.
Pour the pesto into a large bowl. I advise you to make a double quantity and keep half of it in a jar to keep in the fridge for a maximum of two days. You may need it for another recipe.
This recipe includes konjac shirataki noodles (noodles), 2 packs of those already hydrated. You can find them in organic shops, in oriental shops in large supermarkets or here: Konjac Slim Spaghetti Magliataki – Pack of 5
Alternatively, you can use traditional pasta considering that the sauce for one serving has 110 calories.
Konjac noodles not only have very few calories, about 10/20 every 100 grams, but they are functional for weight loss: konjac or glucomannan promotes the sense of satiety and nourishes the good intestinal bacteria.
Open the package, throw away the conservation liquid. Blanch the two packs for 3 minutes in a liter of water in which you will also pour half a teaspoon of vinegar, then drain them very well, add them to the sauce and mix everything.
Divide into two serving plates and serve immediately.
