Protein ice cream, the recipe!

This year Yulty was released , the protein ice cream that you can buy on the refrigerated counter, with vanilla, coconut and chocolate flavors: what does protein ice cream mean? An ice cream with much fewer carbohydrates than traditional ice cream and much more protein, also perfect as a substitute meal and with a reduced calorie content. All nice, too bad that looking at the site, this ice cream is not yet distributed throughout Italy . You can find it in sports food stores, if they have a counter; in the Esselunga chain stores; in those gyms that have a refrigerated counter.

But if we wanted to make protein ice cream ourselves, are there any easy recipes? Yes. With a perfect ingredient to give it body and creaminess: xanthan gum, a special fiber that is useful even if we are low in fiber in the diet, because it helps intestinal regularity. Xanthan gum gives voluminous texture to spoon desserts, ice creams or creams. You can buy it here . Considering that it takes very little to get protein ice cream or other sweets, this gum is absolutely convenient if we take the 250 gram bag.

PROTEIN ICE CREAM (WITH XANTHANE GUM)
Lemon cream:

500 ml of sugar-free almond milk (rice is also good) 1 scoop of vanilla-flavored whey-type protein powder (alternatively 250 ml of almond milk and 250 gr Greek yogurt 2 or 0% fat) 1 teaspoon of lemon extract or 1 generous teaspoon of grated lemon peel sweetener to taste half a teaspoon of xanthan gum

Blend all the ingredients together, and pour the mixture into a tub of ice cubes. Solidify the cubes in the freezer.
Then take them out, put them in the mixer, and operate until you get a creamy ice cream to be consumed immediately.
