PROTEIN PANCAKES WITHOUT PROTEIN POWDER
For 4 medium-sized pancakes (= one serving):
– one medium egg
– 15 grams of organic coconut flour (attention! I don’t mean grated coconut flour, but the fine organic one, like Fior di Loto Coconut Flour . You recognize it because it has about 350 calories as a caloric value against the 660 of grated coconut flour and has a lot of fiber so you just need a little)
– 50 gr of ripe banana or apple compote

Procedure: drain the tofu well, dry it with an absorbent cloth and put it in a mixer together with the coconut flour, egg, herbs and Truvia. Let the mixer work for at least a minute, running it twice for 30 seconds. Pour the mixture into a bowl where you have mashed your banana with a fork. If you use apple puree instead, you can do everything in the mixer. Uniform well by mixing. Heat a non-stick pan, and portion the mixture into four protein pancakes, to be turned after about 60 seconds (two minutes in total).
