Ingrediants
- For 6 muffins:
- a medium-large pear peeled and cut into pieces
- 120 grams of 0% fat white yogurt
- 120 grams of wholemeal flour
- 4 heaping tablespoons of Truvia (alternatively brown sugar)
- grated zest of one lemon
- a pinch of ground ginger (optional)
- one medium egg
- three teaspoons of coconut or olive oil
- 5 heaping tablespoons of parmesan or parmesan
- half a sachet of vanilla yeast
Instructions
- Mix the wholemeal flour with the Truvia, spices, lemon zest, baking powder and grated parmesan. Cook the diced pear briefly in a non-stick pan with a teaspoon of water until the fruit is cooked and dry. In a second bowl, beat the egg with the oil, add the yogurt and then the pear. Add the pear and yogurt mixture to the flour mixture. Fill the six muffin tins for ⅔. Cook at 175 degrees for twenty minutes.
- Whole wheat flour recommended: spelled flour, stone ground whole wheat flour, russello flour, or half whole wheat flour and half buckwheat flour.
