Do you know the Palmini? It is an American brand that, although it is not the only one to make them, is undoubtedly the most famous in the production of palm hearts pasta, a dietary pasta with the same calories as shirataki or konjac pasta and 4 net grams of carbohydrates. every 100 grams. A very valid dietary alternative to konjac paste , because in appearance and consistency it looks more like the traditional one, starting with the color, which turns to straw yellow.
If in the United States it has been on the market for a few years, in Italy it is only found in some online stores for the moment.

I Palmini, the most famous brand of hearts of palm pasta, is in fact a paste made from the fiber of hearts of palm. With 12-20 calories per 100 grams, depending on the type, it has the advantage of not having the same intestinal problems that many experience with konjac. Although palm hearts have fiber, the secret of Palmini palm paste is its water content: it has over 20 percent of it, hence its low calories.

Furthermore, it is not a food that is not digested and assimilated: it has some nutrients, albeit few. Two to 4 grams of net carbs and two grams of protein per 100 grams. This makes it more like vegetable noodles.

There are those who soak it in vegetable milk, personally I don’t find much difference using water alone.

What does it taste like?
Unlike konjac, it actually has a bit of a flavor, that of hearts of palm: ok, not a great flavor, but still better than konjacs. It also absorbs the seasoning, stays al dente like konjacs and has a slightly acidic aftertaste that can be removed by soaking it in milk.
