Today I am talking about two things about which you often ask me enlightenment: what to eat when we are at work and often do not have a real lunch break? Many people who write to me, for example, work in shifts: this means that sometimes I’m at home, sometimes I’m away, with the consequence that if you don’t have the time and the desire to plan meals, you end up eating at the bar. or in rotisserie. Other people may be alone during the day and try to get by without cooking an appropriate meal.


The curse of those who are alone is that
 , even if they are a pentastellato chef, the desire to get in the kitchen to cook something healthy is the same desire that one feels at the thought of attending an ikebana course with cacti. Let’s face it: it doesn’t gobble us up.
Below I propose some ideas for a packed lunch (something to take from home, I don’t mean the schiscetta but almost) or a quick lunch in the office that may be useful to you. They do not require too much time or particular organization.

SACK LUNCH OR QUICK LUNCH IN THE OFFICE:
– cold salad of legumes and oats or oats: cut some cherry tomatoes such as datterini or pachino, add drained legumes of your choice (chickpeas, cannellini beans), a tablespoon of oil, a tablespoon or two of wholemeal oat flakes, a little lemon juice, salt, pepper and aromatic herbs of your choice. Close everything in the box and go. You can also make a salty porridge, with sautéed vegetables in small pieces to which 4-5 tablespoons of oat flakes and a drizzle of oil can be added raw. If you prepare it in the morning, the oat flakes will soften, taking on the seasoning.
– hard-boiled eggs (two, still in the shell) + cherry tomatoes + a cereal bar or a pack of crackers. – the smart sandwich

And what has it got? Lettuce leaves, rocket or spinach, some raw champignons, large salad tomatoes to which we can add a thick slice of avocado or natural tuna or hummus also bought or light ricotta / exquisa fitline / primosale cheese. A teaspoon of pesto on the bottom of the bread instead of mayonnaise. Of course, the smart sandwich is also super smollicatissimo, so you can put more vegetables in it.
