A light cream in calories but really delicious and simple to make, as well as with a low glycemic index. If you love rice pudding and puddings, this delicious but healthy and light cream, made with oats, buffalo ricotta and nutella, will leave you absolutely satisfied. Try it and also offer it as a snack for children or as a dessert for guests. That’s 175 calories a cup.
Ingrediants
- For four people (and four cups of cream)
- 80 grams of wholemeal oat flakes (300 Kcal)
- 10 grams of butter (80 kcal)
- 20 grams of honey (60 calories)
- a pinch of salt
- essence of vanilla
- 4 teaspoons of Nutella (110 calories, or 20 grams)
- 100 grams of light cow’s milk ricotta (150 Kcal)
- a little bitter cocoa for sprinkling (20 calories)
Instructions
- Pour the oat flakes into a saucepan with about 400 ml of water, bring to a boil and boil for about five minutes, then stir and continue stirring for another ten minutes, until you get a nice thick oat cream (another ten minutes about). When hot, add the butter and a pinch of salt. Let it cool for half an hour and add the ricotta already mixed with honey and vanilla essence (without exaggerating). Mix very well. Take the cups, sprinkle lightly with cocoa on the bottom and place the first large spoonful of cream for each cup. Add the teaspoon of Nutella in the middle. Cover with more oat cream. Sprinkle with cocoa again and serve immediately or whenever you want but without keeping it in the fridge.
- The extra idea: garnish each cup with a little chopped hazelnuts or personalized with a grated orange peel instead of vanilla essence.
