Low carb chocolate mousse
A low carb chocolate mousse , less than 200 calories per serving, ideal for those following low-carb diets, a ketogenic or reduced-carb diet or a paleo-like diet.
It is a really simple and easy to make recipe, which involves the use of coconut milk (not the coconut milk drink, but the real coconut milk, which you can find in jars, like this  one from Biona). Here she is:
Low carb chocolate mousse
Ingredients for 8 people
400 gr of coconut milk type Biona organic Coconut Milk (about 1 pack)
20 gr of extra dark chocolate
3 tablespoons of unsweetened cocoa
a pinch of salt
2 tablespoons of erythritol or a heaping teaspoon of stevia (check by adding half at a time)
Keep the jar of coconut milk in the fridge overnight. The next day, open it and without shaking it, remove the liquid that has separated from the cream (you can use it for other preparations, or drink it separately with orange juice) and put the solid part in a bowl.
Add the sweetener and the unsweetened cocoa and whisk everything with a whisk, until you get a very firm cream. Separately, reduce the extra dark chocolate into flakes.
Pour the cream into 8 bowls and keep them in the fridge at least two hours before serving, sprinkling them with dark chocolate. Kcal of the chocolate mousse: 192, net carbohydrates 3, proteins 4, fats 18 grams.
