Light recipes, how to find light ideas
I have a passion for cooking , and I have a particular obsession with lightening up recipes for tasteful diet versions.
The problem, as I have already written elsewhere, is that often many bloggers who dabble in the kitchen improvise light recipes that are the result of rash substitutions.
Which do not take into account, especially in desserts, neither the volumes nor the characteristics of the initial ingredients.
If you want to lighten a pie of a fatty ingredient, you have to use your wits and find a food with a percentage of fat. For example, you can substitute full-fat Greek yogurt for butter in the cake, but not skim milk.
In short, the results leave something to be desired.
For heaven’s sake, I don’t necessarily want healthy chefs, but at least cooks who are a little skilled in healthy nutrition and not just creative. Replacing butter with oil, of any kind, does not make a cake something light.
Eliminating eggs but mixing 250 grams of flour with the same dose of sugar creates a glycemic monster, and not a diet dessert.
