The Neapolitan miles is a delicious dessert that is often made at carnival, but which is also quite sugary.

Furthermore, the presence of whole milk, ricotta and butter make it caloric despite not being a particularly heavy dessert.
With this recipe lightened but not far from the traditional miles , you can enjoy a slice of Neapolitan miles for only 170 calories , half those of the typical dessert.

It is essential to have untreated oranges at home, because they will flavor the cake with the zest.
Furthermore, in this recipe, in order not to distort the flavor, not all the sugar is eliminated, but replaced in part with stevia and in part with muscovado cane sugar.
A “secret” ingredient of this light Neapolitan mile will also make this cake nice and moist without using butter and the sugar reduction will not feel at all!

I do not recommend that you “degrease” the recipe further: the amount of sugar and fat is already minimal and you risk having a sweet that is not very soft and far from the real taste.

MIGLIACCIO NAPOLETANO LIGHT

Ingredients for a light Neapolitan Mille of 8 servings

150 grams of semolina
500 ml of skimmed milk
170 grams of apple, weighed already peeled
200 ml of water
the peel of a large untreated orange or the peel of two medium oranges
two medium eggs
a bag of vanillin
a pinch of salt
50 grams Truvia muscovado cane sugar
4 tablespoons (or sweetener suitable for cooking)
2 packs of 90 grams of “la light” Santa Lucia ricotta .
Note: as an alternative to ricotta, if you can’t find another brand of lean ricotta, you can use a 170 gram pack of Fage Greek yogurt with 5% fat, therefore whole, or the same weight of Milbona quark cheese, always whole.

Method

Preheat the oven to 180 ° and line a cake pan with a maximum diameter of 22 cm with parchment paper.
Boil the apple in pieces in a saucepan or in a frying pan with a drizzle of water, drain well, let it cool and blend it together with the vanillin. Put the puree aside.

Grate the orange zest without affecting the white part, set it aside.

In a saucepan, heat the water and skimmed milk, without boiling: at that point pour the semolina, stirring with a wooden spoon for 5 minutes until it thickens. Turn off the heat and immediately add the apple puree, mix well and then let it cool by covering with a lid or plastic wrap.

In a bowl, work the eggs with the brown sugar and the truvia with an electric whisk until you get a light and soft cream.
Now add the ricotta or Greek yogurt, the orange zest and finally the cold semolina cream.
Mix well, pour the mixture into the pan, level it and bake in the oven for 50 minutes.
Leave to cool with the oven off for another 10 minutes.
Take it out of the oven, cover with cling film and let it cool completely before unmolding.

Sprinkle with cinnamon or other orange zest if you want.
