Light mayonnaise without oil: the 6 kcal recipe

Yesterday I tried a version of the light mayonnaise , that is, without oil.
The result is good enough to fool yourself into real mayonnaise, and above all it has just over 60 calories per hundred grams! That is 6 calories per tablespoon.

Use it for fake “fries” (with a potato peeler cut a peeled potato into very thin slices, sprinkle the slices with salt and bake at 170 degrees until golden brown).

Or to accompany fish, make a light chicken salad, etc.
Absolutely to try.

Light mayonnaise without oil: the 6 kcal recipe

For 250 gr. of mayonnaise
200 ml. of water
10 gr. cornstarch (about 34 Kcal)
salt
1 very fresh yolk (about 60 Kcal)
lemon juice, 1 tsp.
a few drops of vinegar.
1 teaspoon of mustard (optional, 30 Kcal)

Dissolve the cornstarch well in a cup with three tablespoons of water, then add it to the remaining water and transfer everything to a saucepan adding a pinch of salt.
Bring to a boil and stir vigorously until the mixture thickens.

At this point, lower the heat to low, add the mustard and egg yolk, stirring very vigorously to prevent the egg from congealing.

Continue for a minute, then turn off the heat, add the vinegar, stir and let it cool. As soon as the cream is warm, pour it into a blender and add the teaspoon of oil and lemon juice. Blend for a minute. Then pour the result into a bowl, cover with cling film and let it cool in the fridge.
