Light Japanese banana cake, very easy recipe
This light Japanese banana cake is a fluffy recipe with very little fat as it has no butter or oil. Compared to Japanese cakes such as Japanese cotton cake , this cake is very easy and always succeeds. In fact, the egg whites should not be whipped. Another peculiarity is that dry yeast must be used for the preparation, the one used for bread products, and not baking powder. The result is a spongy and soft bread similar to a plum cake.
In addition, this light Japanese banana cake is rich in potassium and perfect for those suffering from high blood pressure.

JAPANESE LIGHT CAKE WITH BANANA

For 6 servings:
- 3 medium eggs
- 75 grams of vanilla powdered sugar
- same weight as white whole greek yogurt (typically 150 grams, so half a jar)
- 150 grams of weak flour for cakes
- 100 grams of ripe banana
- a level teaspoon of dry yeast ( for example Caputo dry yeast )
- a few drops of lemon juice
- a pinch of cinnamon or grated lemon peel
Method.
Clean the banana and weigh 100 grams of pulp. Mash it with a fork, add a little lemon juice and set aside (don’t blend it, use a fork). With an electric whisk or by hand, whip the whole eggs with the vanilla sugar after sifting it: use a large bowl. Add the Greek yogurt, I recommend that it is whole. Add the sifted flour and continue to whisk until you get a nice thick batter.
Now add the mashed banana, mix very well to obtain a smooth and homogeneous mixture. Finally the yeast and cinnamon or lemon peel.
Put the mixture in a liter plum cake mold lined with parchment paper. Cover with a sheet of cling film and let the dough rest for two and a half hours.
Now turn on the oven at 160 °, put a jug of water inside.
After 10 minutes, remove the foil and cover the mold with a lightly oiled aluminum foil instead, then put it in the oven for 50 minutes. Open the oven, remove the aluminum foil from above the mold, remove the beer and continue cooking the Japanese cake for another 10 minutes.
Now let it cool completely and unmold your cake. Sprinkle with icing sugar and enjoy.
