In America they have been depopulating for some years, but we almost don’t talk about them. I’m talking about “kale chips” or light fries, made of cabbage leaves. The ideal for this recipe is black cabbage, the one with long leaves, but besides being not very cheap it is a bit difficult to find. The alternative to the hand is the savoy cabbage, especially the outer and wide leaves, the beautiful green ones. Per person, that’s about fifty calories for the equivalent of an average bag of potato chips.
Ingrediants
  • LIGHT FRENCH FRIES
  • For one person:
  • Savoy cabbage or black cabbage leaves (about 200 grams, 5 calories)
  • A teaspoon of seed oil (45 calories)
  • Sweet or spicy paprika or turmeric of your choice or pepper.
  • A spoonful of soy sauce.
Instructions
  1. Take the green cabbage leaves after washing and drying them and cut them into triangles roughly the size of half / one third of your palm. Put them in a very large bowl (they are voluminous), add the oil and the soy sauce, the spices and mix very very well, as if you were dressing the salad. Line a baking sheet with parchment paper and lay the cabbage leaves, taking care to create a single homogeneous layer, without making heaps or covering leaves with leaves.
  2. Put them in a hot oven, at 200 degrees, for about twelve minutes. Then check if they seem crunchy, otherwise continue cooking for a few more minutes. In a maximum of fifteen minutes they are ready. Eat them cold or lukewarm.
  3. For those who were not on a diet and could afford fifty calories more, sprinkle the leaves of a tablespoon of sesame seeds before baking.
