I don’t like replacing eggs, I admit, but there is a vegan and healthy method in which chia seeds are used . How? Chia seeds like many other seeds when left to soak in water release a gelatinous fiber. For this to work, you just need to mix a tablespoon of lightly crushed chia seeds with five tablespoons of water (for example in a cup) and leave in the fridge for half an hour, preferably an hour. If you have more time, for example you can do it the day before, it also works with well-pounded flax seeds. They are both excellent sources of omega 3.
