Light broccoli bread: the recipe
A light bread with broccoli , in the form of small vegetarian sandwiches that we can then stuff as we want: also ideal for those with children and who want to make them eat vegetables, this light bread is delicious and represents an alternative idea to traditional bread for lunch and dinner. LIGHT BREAD WITH BROCCOLI
For 8 small sandwiches
400 grams of broccoli (weighed raw)
4 eggs
4 heaping tablespoons of 500g BIO almond flour, de-oiled
(* de-oiled almond flour you can find it online or order it in organic shops: it has about 350 calories
against 600/660 of normal almonds. It can be replaced by degreased coconut flour, you can find it organic)
a pinch of salt, a pinch of turmeric, a pinch of pepper, a pinch of chopped rosemary (optional)
a little oil for the pan
Procedure: blend the raw broccoli in a blender. Pour the mixture into a bowl and first add the de-oiled almond flour, the herbs, and finally the eggs one at a time. You will get a thick mixture.
In a baking tray with parchment paper and a little oil, form 8 round shapes (you can also use large muffin molds) with the help of a spoon. Bake in the oven at 175 degrees for about 20 minutes.
You can garnish your sandwiches with a spoonful of hummus and some cherry tomatoes.
