Light and gluten-free Christmas log: the recipe

I like the Christmas log and all the sweet rolls, which can be eaten for breakfast or as a snack. Today I fished a light recipe for a light and sinless Christmas log, that is, that will not make us feel pangs of conscience to eat it.

I got the recipe from the Fit With Fun website , the blog of fit chef Nicoletta Truglia. In this regard, I invite you to look a little at her site and be inspired by Nicoletta’s recipes, because they are simple to make and also read without having too many ingredients that are difficult to find. That said, let’s move on.

Here I propose the recipe of his light Christmas Tronchetto for the biscuit dough base. For the filling, the log can be stuffed with Nutella, a chocolate cream, a light Nutella like this , chestnut cream, Greek yogurt added with honey or sweetener and bitter cocoa (instead of yogurt, yoghurt is also good. soy, quark cheese, ricotta). A very Christmas and sugar-free chocolate cream can be this: cocoa and dates.

CHRISTMAS LIGHT TRONCHETTO: THE FIT WITH FUN RECIPE

Recipe without butter, oil, gluten, yeast.

For the base: 2 eggs, 200 gr of egg white, 100 gr of banana, 5o gr of rice or almond flour, vanilla or vanilla flavoring.

Preheat the oven to 200 ° and in the meantime line a baking sheet with parchment paper. 
First whip the egg whites until stiff: then add the eggs and aroma, the very well mashed banana and the flour, continuing to whisk until a homogeneous mixture is obtained.
Level the mixture well on the rectangular pan (medium size), then place in the oven for 15 minutes. 
Remove the base from the oven and wait for it to cool completely before removing the base from the parchment paper. At this point you can fill the base with one of the fillings of your choice. Roll up the log, give it the shape you want and move on to the filling.

As mentioned, with such a light base, we can use skimmed white Greek yogurt (170 grams) to fill with two tablespoons of honey and 20 grams of unsweetened cocoa. Or some chestnut cream or the other ideas seen above.

You can indulge yourself also for the covering as for the filling of the light Christmas log.

For example, I make a very simple cold glaze, which consists in mixing honey with skim milk and bitter cocoa, until you get a smooth and thick cream, easily spreadable and covering.

If, on the other hand, you want a harder coating, you can use normal couverture chocolate, garnished with walnut kernels as in the photo I have chosen.
