Light and diet onion soup: 150 calories per serving
The French onion soup is a classic of French cuisine, but few know how caloric it is.
A serving of onion soup served with bread and melted cheese travels around 700 calories per serving.
Almost like a small margherita pizza.
You will tell yourself: but it is impossible! Why is it so high in calories?
Let me be clear that I am talking about the real French onion soup, which includes not only onions and broth, but also butter, oil, sugar, flour, sliced bread like baguette and lots and lots of aged cheese.
The light versions of the French onion soup often involve the elimination of many ingredients , starting with the bread and cheese. In this article, however, I will show you a recipe for light French onion soup that will only give you 150 calories per serving, but which is a healthy and complete dish similar to the original.
LIGHT FRENCH ONION SOUP
For 4 people
600 grams of golden or coppery onions
1 lt of meat or chicken broth type Star
10 grams of corn or frumina starch
5 grams of butter or 10 grams of margarine
1 teaspoon of brown sugar
salt, pepper,
thyme or rosemary
nutmeg
4 slices wholemeal wasa (blue pack, you can find them in supermarkets) or alternatively 2 slices of
durum wheat bread
60 grams of Galbanino light
Method
Cut the onions into very thin slices after soaking them in cold water for a couple of hours.
If you prefer a more velvety version, chop them raw with a food processor.
Separately, dissolve the cornstarch well in half a glass of broth and keep it aside.
Melt the butter or margarine in a saucepan, put the onions and cook over very low heat, stirring constantly until they are nice and soft. At this point, add the sugar, aromatic herbs, salt and pepper.
Caramelize the onions slightly until you get a dry compoto. Pour the broth over it first, then the half glass of broth and starch, mix well and simmer the mixture for half an hour.
Transfer the soup to 4 oven cassettes.
If you choose to garnish them with the pan pan, each slice will be divided in two diagonally and toasted in the oven first.
Otherwise, put the wasa slices cut in two on each soup, divide the galbanino into 4 equal slices and place the slices on top of the crackers or half slices of toasted pan, pass the cocotte in the oven at 240 ° in grill mode for 8-10 minutes.
Serve the soups hot.
