The jackfruit or jackfruit fruit is a fruit with a thousand properties, and with a unique characteristic. It can become a dietary and low-calorie meat substitute (from raw it has 95 calories per 100 grams). In fact, the jackfruit has a neutral flavor, and is rich in pulp. The jackfruit or jackfruit is an exotic fruit with an oval shape, with a pulp ranging from straw yellow to orange. Once opened, the fruit is divided into globular blocks, and depending on the variety, it has a neutral taste, similar to apple, or a sweeter taste, which almost resembles pineapple. When cooked it has a sweet but savory taste, which many compare to pork or a cooked salami also for its appearance, very fibrous and frayed so the eye hardly notices the difference.
From a nutritional point of view, it is rich in vitamin B6 and potassium.
JACKFRUIT HOW TO USE IT AS A SUBSTITUTE FOR MEAT
The jackfruit is bought pre-boiled. In this case the calories decrease to 30-40 per 100 grams.
It can be bought both natural and already spiced vacuum-packed. In fact, in India it is used to prepare curry dishes.
It is perfect paired as a stew with legumes, or with legume pasta.
Where to find it? In Italy the best brands are Govinda, which offers chopped and diced jackfruit with the addition of spices and tomato paste, or Panela, which offers it vacuum-packed but without additives. In this case it must be marinated with brown sugar, spices, lemon juice or vinegar, and then cooked in a pan with tomato, or chopped and added to chickpeas or crushed beans to obtain vegan burgers.
It can also be fried, breaded and fried, or minced and cooked with tomato paste, oil and herbs or spices, to make a minced sauce similar to that of meat.
