In fact, eating skimmed milk, margarines, fat-free cheeses, would have led to his body not being able to take the fat-soluble vitamins (A, D, E, K) for years, which need fat to be absorbed. These are vitamins that the human body can store, so it takes months or years for the deficiency to occur. Often foods rich in fat-soluble vitamins also have the fats in themselves to absorb them: for example, eggs, butter, whole milk, whole cheeses, liver, red meats. Clearly, if for years our diet consists of egg whites, skim cheeses and skimmed or vegetable milk, it is easy for deficiencies to arise.  Nutritionist Zoe Harcombe points out that the food we eat must nourish us,and that the food industry is responsible for trading in what can be called “fake food”, which contributes to undermining our health. As I have already explained once, this does not mean bathing in fat, but making conscious choices, avoiding all foods deprived of precious substances with the illusion that light products will make us lose weight.
