Ari_WhittenAri Whitten is a metabolism specialist : besides being, let’s face it, a great son, Ari is a nutritionist who in his book ” The low-carb myth ” explains why today everyone writes nutrition diets and propose themselves as gods. guru of healthy eating, going so far as to confuse people with theories based not on evidence and facts, but on pseudoscience and logical fallacy. Proper nutrition is not a question of teams, you should not cheer against carbohydrates or fats or proteins to have the much desired healthy weight: proper nutrition is based on healthy eating, respecting our biology as human beings, without experimenting with strange tricks to accelerate metabolism, crash diets and low calorie diets. And about eating what we like and what is good for us. Now, among the things that are good for us, Ari rehabilitates carbohydrates : the ketogenic diet (eating fat instead of carbohydrates) and the Paleo diet (demonizing carbohydrates since our ancestors did not eat them) are based on logical fallacies that are been refuted by hundreds of studies. Still, people are fascinated by the promises of a healthy weight and better health,then experiencing devastating consequences in years of a no-carb or low-carb diet . Which, while it is true that it does lose weight in the short term, according to Ari it is unsustainable in the long term. And, worse, it hurts.

What are the long-term consequences of a low-carb diet? Slowed metabolism, thyroid dysfunction, fatigue, weight gain, hair loss, worsening of sleep quality, increased stress, sporting inefficiency, progressive reduction of lean mass in favor of fat.
But how? Weren’t Carbohydrates Bad? Was the sugar not toxic?
In the book Ari explains whya diet that demonizes carbohydrates is not only wrong, but ineffective and absolutely counterproductive. If we were to think about what hurts us, and we decided to research the internet, we would find that practically everything hurts us, including drinking too much water and eating too many vegetables. If we want to have support for our beliefs, just type on the internet what we want to hear and we would find dozens or hundreds of partial studies that prove us right. But does this really mean that we are right?
In this book Ari demonstrates how the theories that carbohydrates are responsible for overweight and not fat are partial.. And it does it quite well, so if you know English and want to understand how things stand, Ari lists a number of studies and counter-tests to books that reward low-carb diets.
Is it true that low-fat diets have made us fatter? We’ve never been on a low-fat diet, explains Ari. Simply because we have stuffed ourselves with light, refined products, and with the worst vegetable fats like margarines. We have never had a low-fat diet, modeled on the Mediterranean diet: that is, aiming for foods that are naturally low in fat, not artificially.
Is it true that carbohydrates make us fat by raising insulin levels?Ari proves that insulin is not our number one enemy, and it does not cause obesity simply because it participates in the storage of fat. Participate, it does not cause obesity. They are two profoundly different things. Insulin is a very useful hormone, which allows us to bring nourishment to the cells: without insulin, or with insufficient levels of insulin because we do not eat carbohydrates, everything that is made up of cells in our body tends to waste away. And what in our body is not made up of cells?
These are some of the reasons why according to Ari if we want to improve our metabolism and burn fat we need to start with carbohydrates: obviously, the right carbohydrates, that is, whole grains, whole grain products, and nothing that is industrial, refined.
