A diabetic, whether type 1 or type 2, as you know must absolutely avoid the glycemic peak and also insulin , and to limit the symptoms must eat without sugar. The best thing would be to limit the sugar as much as possible, that is, drinking some bitter things, and having sweets and biscuits cooked with alternative sweeteners with a low glycemic index: now fructose, agave syrup, barley malt are the most popular. , isomalt, erythritol. But it is not said that these substances are NOT harmful. This is why even in the preparation of sweet dishes, fruit (the real natural fructose) or unsweetened apple juice must be used to help sweeten.
Therefore an apple pie with wholemeal flour is an excellent dessert for a diabetic, if we put very little fructose and use sweet apples. What about carbohydrates? It would be enough to avoid any refined, white (or often white) food, starting with rice and white bread. Avoid cooking pasta for a long time, and even try to cook it the night before. Alternate pasta for lunch with cereals and vegetables such as spelled, oats and barley or rye, quinoa, etc. or brown rice. Often eating legumes also combining them with pasta, in order to reduce the latter: pasta (broken or with egg) up to 50 grams with eighty grams of dried and boiled legumes is a very satisfying dish, which with raw vegetables for appetizer is perfect for diabetes sufferers.

In short, they are simple rules but they can change the life of both those who suffer from diabetes but do not know how to regulate them (I have diabetics in the family who make gross errors in their diet) and those who want to approach a correct diet.
