Cookies without oven and raw, with chocolate!
Today I wanted a really simple and quick recipe for “summer” cookies and in particular I had no desire to turn on the oven: since I am really fascinated by raw food cooking (especially blogs: I’m not a raw foodist, but some bloggers achieve results exceptional in truly high-quality raw desserts), I found in this incredible blog ( Sweetly Raw) a recipe for no-baked chocolate chip cookies , in which all the ingredients are mixed raw. I don’t consider it a 100% raw recipebecause to be such you need raw butter (butter obtained from raw milk, very difficult to find in Italy) and raw honey, but by the way I give the substitution because these biscuits without an oven are also raw. The biscuits should be kept in the fridge, in a sealed container.

COOKIES WITHOUT OVEN AND RAW CHOCOLATE
1/4 CUP OF ORGANIC, RAW BUTTER (about 60 g: you can replace it with 3 tablespoons of coconut oil added to 3 tablespoons of coconut milk, the real one, in a jar, or 60 g of raw almond butter or hazelnuts)
3 SPOONS OF RAW HONEY or organic honey or AGAVE NECTAR OR YACON SYRUP
2 SPOONS OF COCONUT OIL
Vanilla flavor (or vanilla pod seeds)
A pinch of whole salt
2/3 of dried grated coconut (commonly called flour of coconut) or 210 gr
113 grams of macadamia nuts
raw cocoa beans as required (if you are not raw food: ok chocolate chips or dark chocolate in small pieces).
Procedure: Chop the macadamia nuts and add them to the coconut and cocoa beans (or choco nibs or chocolate chips).
Pour the butter, coconut oil, honey, vanilla and salt into a blender. Work the mixture into a cream and add the dry elements.
Divide the mixture into many balls and gently crush them with the palm of your hand until they become biscuits: you decide the size, I would say not to exceed 5 cm in diameter. The mixture will be soft. Put them in a tray and cover them with cling film. Keep them in the fridge for half an hour and try them. They should have hardened and have a firm consistency.
From that moment on, they can be served.
