Butyric acid to increase metabolism

 

woman-eating-swiss-cheese-featureA study published in the Journal of Agriculture and Food Chemistry clears cheese of the allegations of making you fat and hurting – something I’ve known for a long time actually, being in line with the studies of many nutritionists and biologists I follow. In particular, aged cheeses are a real panacea for both digestion and metabolism and, like butter, they are foods that allow us to digest more easily and quickly and to burn more.
In fact, in the study 15 men suffering from obesity were given a complete diet of milk (whole, absolutely whole), butter and cheese, and it was discovered that in two weeks of diet the men lost weight and increased their metabolism. It is not the first study that shows how a diet with cheese, butter, artisanal ice cream and whole milk (but fatty dairy products are also fine, for example buffalo mozzarella, butter, cream or mascarpone and finally whole yogurt) both preparatory to weight loss: initially it was assumed that the cheese with its full-bodied taste satiate more and thus allow you to eat less. Then other studies, like this one that lasted 16 years , made it possible to correlate the consumption of cheese with a leaner body.

Instead the reasons are more complex and not simply a matter of palatability: butter and fatty cheeses in the intestine form a fatty acid called butyric acid. In fact, these foods already contain butyric acid, but they also help to form it in our intestinal environment thanks to the fermentation of starches and sugars. What we assume is a bad thing (eating carbohydrates or legumes and fermenting them in the stomach, which causes us to feel bloated and sleepy), when we increase the diet with butter and cheese it becomes a way to increase our supplies of butyric acid.
You know when our sweat seems particularly strong? It is one of the unwanted effects of those who have more butyric acid, but there are also positive effects, which affect digestion, immune defenses and metabolism . There is indeed a link between butyric acid and high metabolism.
In fact, butyric acid helps the proliferation of good bacteria in the bacterial flora, and keeps our intestinal mucosa healthy; is a powerful gastric anti-inflammatory, and according to Stephane Guyenet, a leading obesity expert , butyric acid reduces stress and prompts the body to burn fat, keeping lean mass alive and active. In short, butyric acid is a real panacea, and it is good to always produce it in sufficient quality to keep our metabolism high.
You may wonder how. Well, on the one hand, by eating foods that contain them: butter, cream, cheeses and fatty dairy products must never be missing from our daily diet. On the other hand, eating a diet with fiber and starchy foods, therefore carbohydrates, essential to create that intestinal fermentation which is the natural breeding ground for butyric acid.
So let’s say yes to butter and cheese or whole milk and ice cream to keep us lean and boost metabolism. And we don’t exclude complex carbohydrates from our diets to top it off.
