Norwegian study , as part of the  FATFUNC project , conducted by the University of Bergen, saves saturated fats from demonization: according to the researchers, in fact, six saturated fats come from quality sources, not only do they not harm health in general, but they even improve good cholesterol levels in the blood. To reach this conclusion, which goes against the tide of the famous hypothesis of lipids ( saturated fats are positively associated with the risk of cardiovascular disease ) , the researchers followed up a group of 46 overweight men with metabolic syndrome and visceral fat two different diets.: one high in carbohydrates and one high in fat, especially saturated. In both cases, both the calorie ceiling and the protein intake were identical.

Health parameters improved in both diets , which were followed by the group for three months, and which limited the quality of the foods chosen, the reduction of simple sugars (even in the high-carbohydrate diet), the choice of minimally processed and wholesome foods and foods with a lower glycemic index. In particular, cardiovascular health risk was reduced in a diet high in saturated fat (from butter, cream, cold-pressed oils), with an increase in good HDL cholesterol.
With this study, the researchers wanted to demonstrate that it is not saturated fats that influence cardiovascular health per se, but that the quality of the foods we eat in the diet, the genuineness of the same and the caloric ceiling are instead the aspects to be kept in mind. account in the metabolic syndrome.
