Palmini, the low-calorie pasta that is not from konjac
Do you know the Palmini? It is an American brand that, although it is not the only one to make them, is undoubtedly the most famous in the production of palm hearts pasta, a dietary pasta with the same calories as shirataki or konjac pasta and 4 net grams of carbohydrates. every 100 grams. A very valid dietary alternative to konjac paste , because in appearance and consistency it looks more like the traditional one, starting with the color, which turns to straw yellow.
If in the United States it has been on the market for a few years, in Italy it is only found in some online stores for the moment.
Hearts of palm pasta, the new dietary and low-carbohydrate pasta
I Palmini, the most famous brand of hearts of palm pasta, is in fact a paste made from the fiber of hearts of palm. With 12-20 calories per 100 grams, depending on the type, it has the advantage of not having the same intestinal problems that many experience with konjac. Although palm hearts have fiber, the secret of Palmini palm paste is its water content: it has over 20 percent of it, hence its low calories.
Furthermore, it is not a food that is not digested and assimilated: it has some nutrients, albeit few. Two to 4 grams of net carbs and two grams of protein per 100 grams. This makes it more like vegetable noodles.
But, as I said, its appearance and consistency make it look like pasta.
And unlike konjac shirataki (those already hydrated), Palmini should be cooked for 5 minutes in boiling water, after having rinsed it well and soaked in water or milk for about ten minutes at least to eliminate the smell of preserves.
Only at that point it should be blanched.
There are those who soak it in vegetable milk, personally I don’t find much difference using water alone.
What does it taste like?
Unlike konjac, it actually has a bit of a flavor, that of hearts of palm: ok, not a great flavor, but still better than konjacs. It also absorbs the seasoning, stays al dente like konjacs and has a slightly acidic aftertaste that can be removed by soaking it in milk.
Looks like this. Unlike konjac pasta, Palmini goes best with more traditional sauces.
Where to buy Palmini pasta?
As I said, Palmini is just one of the palm hearts pasta brands. There is also the Keto diet Food brand and the Natural Heaven brand that make it. The formats available in Italy are spaghetti, linguine and lasagna for the first two brands: Natural Heaven also has rigatoni.
On the internet I found and bought it on Pinkfoodshop , a dietary product site full of delicious things that I recommend you to keep an eye on. On Amazon we have both Palmini and Natural Heaven. The price of the first is the most advantageous.
Palmini Low carb Lasagna | 4 g of carbohydrates | Gluten Free (14 Onze – 3 Pack)
Small consideration . I would invite Italian companies to also propose these alternatives in Italy: I understand that we are the “cradle” of durum wheat pasta, but this is a product that complements the others, does not replace them. And it would have a good market.
Today there are edamame noodles, shirataki noodles, courgette noodles, purple potatoes, sweet potatoes, and now palm noodles. But why force us to import everything
